Curry stew chicken with vegetables

 

Sauté half a chopped onion with extra virgin olive oil, broccoli, 5 mushrooms, half a zucchini/courgette cut into cubes, 10 pea pods, a chopped red pepper, salt and curry to taste. Cover with twice the volume of hot water and add 10 pieces of chicken. Cook over low heat (+/- 25 minutes)
