7 sauces for your meals

 

TOMATO SAUCE 1

In a saucepan sauté a clove of garlic in a spoonful of extra virgin olive oil. Add 6 chopped plum tomatoes, 6 basil leaves, salt. Cook over low heat.

 

TOMATO SAUCE 2

In a saucepan, sauté a chopped onion in a spoonful of extra virgin olive oil. Add 6 chopped plum tomatoes, ½ chopped red pepper, salt and 2 bay leaves. Cook over low heat.

 

TOMATO 3 SAUCE (for pizzas)

In a saucepan sauté 2 finely chopped cloves of garlic in 1 tablespoon of extra virgin olive oil. Add 400 ml of tomato puree, salt and 2 tablespoons of oregano. Cook over low heat.

 

VEGAN MAYONNAISE (To accompany your baked potatoes)

In a glass, a little wider and taller than the blender, put:

  • 1 glass of sunflower oil
  • 1/3 glass of soy or oat milk
  • 1/2 clove of garlic
  • Salt

Beat at low speed. Once the mixture has blended at the bottom, move the mixer little by little, so that it blends the oil that is on the surface of the mixture.

 

BECHAMEL SAUCE (To accompany your vegetables, rice or potatoes)

  • 50 gr buckwheat or white oat flour
  • 50 gr Soy margarine
  • 500 ml Vegetable milk (soy, oat)
  • Nutmeg
  • Salt

Melt margarine in a saucepan, taking care not to burn, because it would give the whole dish a bitter taste. Over low-medium heat, add the flour, little by little, stirring constantly to make a smooth paste. Turn it over a few times so that the flour browns slightly. Then add the milk little by little, and again stir it so that everything blends well together. Let the dough cook over medium heat for a while, so that the flour is not raw. Adjust the salt, and add a little freshly grated nutmeg.

 

PESTO (to accompany your pasta)

  • 2 cups fresh basil (gently pressed)
  • 1/2 cup of pine nuts (other options are walnuts or almonds)
  • 1 or 2 cloves of crushed garlic
  • 1/2 cup extra virgin olive oil
  • Salt and pepper to taste

Put the basil, pine nuts and garlic in the blender (we can also do it with the mortar and pestle). Beat to a thick paste. Then add the olive oil little by little while continuing to grind the mixture. Salt, pepper. Grind everything together a little more until you get the right texture.

 

MOJO VERDE (To accompany your meat or fish)

  • 1 head of garlic (8-10 cloves)
  • 1 bunch of coriander
  • 1 teaspoon of cumin seeds
  • 15 tablespoons of olive oil
  • 1 teaspoon of salt

Beat all the ingredients with the blender adjusting the consistency with a little water.

 

CHIMICHURRI (To accompany your meat or fish)

  • 1 head of garlic (8-10 cloves)
  • 1 bunch of parsley
  • One teaspoon of paprika (sweet or spicy)
  • 1 teaspoon of cumin seeds
  • 15 tablespoons of olive oil
  • 1 teaspoon salt

Beat all the ingredients with the blender, adjusting the consistency with a little water.
